Proanthocyanidins (PACs) are polymers of flavan-3-ols that are abundant in many vegetable foods and beverages widely consumed in the human diet. Growing evidence supports the beneficial impact of dietary PACs in the prevention and nutritional management of noncommunicable chronic diseases. PACs with a degree of polymerization >3 are thought to remain unabsorbed in the gastrointestinal (GI) tract and accumulate in the colonic lumen. Therefore, the gastrointestinal tract can be considered a key organ for dietary PACs to promote health. PACs form nonspecific complexes with salivary proteins in the oral cavity, resulting in astringency, and with dietary proteins, pancreatic enzymes, and nutrient transporters in the intestinal lumen, reducing digestion and absorption of carbohydrates, proteins, and lipids .
